Step-by-Step Instructions
  1. Prepare Cherry Mixture: In a saucepan, combine fresh cherries, sugar, lemon juice, and Amaretto. Heat over medium for 5-7 minutes until the cherries soften and release their juices, creating a syrupy mixture. Stir occasionally, and once tender, remove from heat and cool completely.
  2. Whip Mascarpone Cream: In a mixing bowl, whip heavy cream until soft peaks form. In another bowl, blend mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture.
  3. Prepare Espresso Layer: In a shallow dish, combine brewed espresso coffee with a splash of Amaretto, stirring to create a dipping mixture.
  4. Assemble the Tiramisu: Dip ladyfingers in the espresso mixture for 1-2 seconds per side. In an 8x8 inch dish, layer dipped ladyfingers, mascarpone cream, and cooled cherry mixture. Repeat layers.
  5. Chill: Cover and refrigerate for at least 4 hours, but overnight is ideal.
  6. Garnish & Serve: Dust top with cocoa powder and add shaved chocolate and extra cherries before serving.
