For the Pasta
  • 8 oz Fusilli Pasta or your favorite pasta shape
For the Dressing
  • 1 cup Plain Yoghurt or unsweetened plant-based yogurt for vegan option
  • 1/2 cup Mayonnaise or vegan mayonnaise
  • 2 tbsp Madras Curry Powder choose medium or mild
  • 1/4 cup Mango Chutney or another fruity condiment
  • 2 tbsp Vinegar apple cider or white
  • 1 tsp Salt
For the Fresh Ingredients
  • 1 cup Sweetcorn canned or frozen
  • 1 medium Red Pepper or green bell pepper
  • 1 small Red Onion or green onions
  • 1 medium Cucumber deseeded
  • 1 medium Carrot grated or other crunchy veggies
  • 1/4 cup Coriander or fresh basil or parsley

Method
 

Cooking Instructions
  1. Cook the pasta according to package instructions, about 8–10 minutes, until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, whisk together yogurt, mayonnaise, curry powder, mango chutney, vinegar, and salt until smooth.
  3. Fold in sweetcorn, diced red pepper, chopped red onion, diced cucumber, grated carrot, and coriander. Then, add the cooled pasta and mix until well coated.
  4. Cover and refrigerate for at least 30 minutes before serving.
