Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow dish, combine panko breadcrumbs with grated Parmesan cheese.
  3. Pat the chicken breasts dry and season both sides with salt and black pepper.
  4. Dredge each chicken breast in the panko and Parmesan mixture.
  5. Heat a skillet over medium-high heat and add olive oil, then brown the chicken.
  6. Transfer the browned chicken to a baking sheet and bake for 15-20 minutes.
  7. Butter one side of each slice of sourdough bread.
  8. Grill the bread slices butter-side down in the skillet.
  9. Once baked, let the chicken rest for a few minutes and then slice it.
  10. Toss the chopped romaine with Caesar dressing.
  11. Assemble the sandwich with dressed romaine and sliced chicken, adding optional cherry tomatoes.
  12. Top with the second slice of grilled bread and serve immediately.
