Ingredients

Main Dish
  • 2 pieces Chicken Breasts Thawed is best for even cooking.
  • 4 cups Broccoli Fresh or frozen work perfectly.
  • 1 can Cream of Chicken Soup Can substitute with homemade or non-dairy alternatives.
  • 2 cups Cheddar Cheese Consider lower-fat or dairy-free options.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt
  • to taste Pepper
For Serving
  • 2 cups Rice or Quinoa Can also use crusty bread.
  • 1 serving Fresh Green Salad Brightens the meal.

Equipment

  • Slow Cooker

Method

Preparation
  1. Start by chopping the broccoli into bite-sized florets, ensuring they will cook evenly and retain a bit of crunch.
  2. Season the thawed chicken breasts generously with salt, pepper, garlic powder, and onion powder.
Cooking
  1. In your slow cooker, place the seasoned chicken breasts at the bottom.
  2. Evenly distribute the chopped broccoli over the chicken, allowing the vegetables to steam deliciously above the meat.
  3. Pour the cream of chicken soup over everything, covering the broccoli and chicken completely.
  4. Cover the slow cooker and set it to low for about 6 hours, or on high for about 3 hours.
  5. Check toward the end of the cooking time; the chicken should easily shred with a fork and the broccoli should be bright in color.
  6. When you’re about 30 minutes away from serving, stir in the cheddar cheese and replace the lid.
  7. Once the cheese has melted and the dish is bubbling, it's time to serve.
