Step-by-Step Instructions
  1. Prepare the chicken by trimming and cutting the chicken breasts into smaller cutlets. Pat dry with paper towels.
  2. Mix the breading in a zip-top bag, combining potato flakes, starch, salt, and spices. Seal and shake well.
  3. Prepare the egg wash by whisking eggs in a bowl until frothy.
  4. Bread the chicken by coating cutlets first in the breading mix, then dipping in the egg wash, and back to the mix.
  5. Heat oil in a skillet over medium heat for about 3-5 minutes until shimmering.
  6. Fry the breaded chicken cutlets in batches for about 4-5 minutes per side until golden brown and cooked through.
  7. Optionally, air fry at 350°F for 6 minutes per side for a healthier option.
  8. Prepare the gravy by whisking coconut milk and starch in a cold pot, then heat and stir until thickened.
  9. Serve the chicken on mashed potatoes, topped with gravy.
