  • 1 large Whipped Egg Binds the ingredients together.
Moisture and Flavor
  • 2 tablespoons Olive Oil Avocado oil can also be used.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste.
  • 1 teaspoon Basil
  • 1 teaspoon Parsley

Method
 

Preparation Steps
  1. In a large mixing bowl, combine fresh cauliflower rice and broccoli rice, ensuring they are well-drained. Add the whipped egg and almond flour, then drizzle in olive oil. Stir thoroughly for about 2 minutes until evenly blended.
  2. Sprinkle in salt, garlic powder, black pepper, red pepper flakes, basil, and parsley to the mixture. Mix evenly for another minute.
  3. Preheat your air fryer to 375°F (190°C). If using the oven, preheat to the same temperature.
  4. Take small portions of the mixture, roughly 1.5 inches in diameter, and roll into balls. This should yield about 15 Veggie Balls.
  5. Carefully place the formed Veggie Balls in the preheated air fryer basket and cook for about 20 minutes until golden brown.
  6. Serve warm and store leftovers in an airtight container in the refrigerator for up to 3 days.
