Cooking Steps
  1. Pat the steak dry and season with salt and pepper. Slice the potatoes and chop the onions for cooking prep.
  2. Melt butter in a skillet over medium-high heat. Add potatoes, cooking undisturbed for 8-10 minutes until they form a crust, then flip and cook for another 5 minutes.
  3. Transfer potatoes to a plate, add more butter, and sear the seasoned steak in the skillet for about 3-4 minutes on each side.
  4. Remove the steak, add onions, and cook for 5-7 minutes until soft and golden.
  5. Create space in skillet, crack eggs, cover, and cook for 4-5 minutes until whites are set and yolks remain runny.
  6. Return potatoes and steak to the skillet, warm through for 2 minutes, and serve directly from the pan.
