Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. Take 4 sheets of thawed phyllo dough, brush each sheet with melted butter, and stack them.
  3. Place a stick of feta at one end of the phyllo, sprinkle thyme over it, roll tightly, and seal with more butter.
  4. Arrange the rolls seam-side down on the baking sheet and brush the tops with melted butter.
  5. Bake for 18-22 minutes until golden brown and crisp.
  6. In a small saucepan, combine honey, red pepper flakes, and vinegar, and warm until fragrant.
  7. Once baked, drizzle the warm spicy honey over the rolls before serving.
