For the Cauliflower
  • 1 head Cauliflower cut into bite-sized florets
  • 2 large Egg Whites or Aquafaba use aquafaba for a vegan option
  • 1 cup Cornstarch
For the Sauce
  • 3 scallions Scallions diced
  • 1 inch Fresh Ginger grated
  • 1 tablespoon Orange Zest
  • 3 tablespoons Soy Sauce or Tamari use Tamari for gluten-free
  • 2 tablespoons Sugar or honey/maple syrup
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Chili Garlic Sauce adjust for spice preference
  • 1 cup Vegetable Broth or Water
For the Sriracha Rice
  • 1 cup Rice (preferably Jasmine)

Method
 

Step-by-Step Instructions
  1. Prepare the Cauliflower by cutting a head of cauliflower into bite-sized florets. Toss florets with egg whites or aquafaba, and coat with cornstarch.
  2. Heat oil in a deep skillet to 350°F (176°C). Fry the cauliflower in batches for 3-4 minutes until golden brown.
  3. In the same skillet, sauté scallions, ginger, and orange zest in leftover oil for 1-2 minutes. Stir in soy sauce, sugar, vinegar, and chili garlic sauce.
  4. Create a slurry with cornstarch and water, whisk into simmering sauce until glossy and thickened for 2-3 minutes.
  5. Rinse and cook rice according to package instructions. Fluff and mix with Sriracha, vinegar, soy sauce, sesame oil, salt, and pepper.
  6. Serve the dish by placing Sriracha rice on plates, topping with crispy cauliflower and drizzling sauce over it. Garnish if desired.
