- Prepare the Cauliflower by cutting a head of cauliflower into bite-sized florets. Toss florets with egg whites or aquafaba, and coat with cornstarch.
- Heat oil in a deep skillet to 350°F (176°C). Fry the cauliflower in batches for 3-4 minutes until golden brown.
- In the same skillet, sauté scallions, ginger, and orange zest in leftover oil for 1-2 minutes. Stir in soy sauce, sugar, vinegar, and chili garlic sauce.
- Create a slurry with cornstarch and water, whisk into simmering sauce until glossy and thickened for 2-3 minutes.
- Rinse and cook rice according to package instructions. Fluff and mix with Sriracha, vinegar, soy sauce, sesame oil, salt, and pepper.
- Serve the dish by placing Sriracha rice on plates, topping with crispy cauliflower and drizzling sauce over it. Garnish if desired.
