  • 2 large Eggs beaten

  • 1/4 cup Red Onion chopped
  • 1 whole Jalapeño minced
  • 1/4 cup Fresh Cilantro chopped
  • 1 tablespoon Lime Juice freshly squeezed

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine unsweetened shredded coconut with a pinch of salt in a shallow bowl.
  3. Dip fish fillets into beaten eggs, then dredge in the coconut mixture until well coated.
  4. Place coated fish on the baking sheet and bake for 12–15 minutes until cooked through and golden.
  5. Mix diced mango, chopped red onion, minced jalapeño, and fresh cilantro in a bowl. Add lime juice and season.
  6. Serve the baked fish, topped with the mango salsa.
