  • 2 cloves Garlic Minced; fresh or frozen.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Cumin Optional for Tex-Mex flavor.
  • 1 tablespoon Oil For cooking; use avocado oil if frying.
Optional Dipping Sauces
  • 1 cup Guacamole
  • 1 cup Salsa
  • 1 cup Ranch

Method
 

Preparation
  1. Begin by grating the zucchini and squeeze firmly to remove excess moisture.
  2. In a bowl, combine ground chicken, zucchini, green onions, cilantro, garlic, salt, pepper, and cumin. Mix well.
  3. Shape the mixture into balls, each about 1-2 inches in diameter.
Cooking
  1. To pan-fry, heat oil in a skillet and cook the poppers for about 5-6 minutes per side.
  2. To bake, preheat oven to 400°F, place on a lined baking sheet, and bake for 15-20 minutes.
  3. To air fry, preheat air fryer to 400°F and cook for 10-12 minutes, shaking halfway.
  4. Once cooked, serve alongside dipping sauces.
