For the Dressing
  • 1/4 cup Olive Oil Avocado oil is a suitable alternative.
  • 2 tablespoons Maple Syrup Honey or agave can be substituted.
  • 2 tablespoons White Wine Vinegar or Apple Cider Vinegar Balsamic vinegar is a great alternative.
  • 1 tablespoon Dijon Mustard Select a mild option for balance.
  • 1/2 teaspoon Garlic Powder Fresh minced garlic can be used.
  • Salt To taste.
  • Pepper To taste.

Method
 

Preparation Steps
  1. In a small jar, combine olive oil, maple syrup, white wine vinegar, Dijon mustard, garlic powder, and a pinch of salt and pepper. Secure the lid and shake for 30 seconds. Set aside.
  2. In a large salad bowl, add mixed baby greens. Dice the Honeycrisp apples and add them in. Toss in dried cranberries and raw pecans. If using gorgonzola, crumble it over the top.
  3. Shake the dressing again and pour it over the salad mixture. Toss gently to coat everything well.
  4. Taste the salad and adjust seasoning with more salt and pepper if needed. Serve immediately.
