  • 1 cup Cucumber Diced finely.
  • 1 medium Carrot Diced to match size of other veggies.
  • 1 small Sweet Onion Substitute with green onions for milder taste.
  • 1 cup Bell Pepper Fire-roasted jarred peppers can be used for extra flavor.
  • 1/2 cup Kalamata Olives Pitted and chopped.
  • 1/4 cup Fresh Parsley Can be substituted with fresh dill or cilantro.
For the Dressing
  • 1 cup Plain Greek Yogurt Use unsweetened dairy-free yogurt for vegan option.
  • 2 tbsp Red Wine Vinegar Can be replaced with white wine vinegar.
  • 2 tbsp Lemon Juice Use freshly squeezed for best flavor.
  • 2 cloves Garlic Minced for maximum flavor.
  • 1 tsp Onion Powder Omit if a milder dressing is preferred.
  • 1 tsp Dried Oregano Substitute with Italian seasoning if needed.
  • 1 tbsp Fresh Dill Use dried if fresh isn’t available (1/2 tsp).

Method
 

Step-by-Step Instructions
  1. Cook the pasta by boiling salted water, adding rotini pasta, and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the vegetables by dicing cucumber, carrot, sweet onion, and bell pepper into small pieces. Chop Kalamata olives and parsley.
  3. Make the tzatziki dressing by combining Greek yogurt, red wine vinegar, lemon juice, minced garlic, onion powder, oregano, and dill in a mason jar. Shake well until smooth.
  4. Adjust the dressing if too thick by adding a teaspoon of water and shake again.
  5. Combine the cooled rotini pasta with the prepared vegetables and pour the tzatziki dressing over. Toss gently to coat.
  6. Chill the salad in the fridge for at least 1 hour before serving. Toss gently before serving.
