For the Greens
  • 4 cups Fresh spinach Can swap with kale or Swiss chard.
  • 1/4 cup Basil leaves Dried basil can be used if fresh is unavailable.

Step-by-Step Instructions
  1. In a large pan, heat the oil from the sun-dried tomatoes over medium heat. Add the chopped shallot and sauté for about 2 minutes until it becomes translucent and fragrant.
  2. Incorporate minced garlic and the sun-dried tomatoes into the pan, stirring for approximately 30 seconds until aromatic.
  3. Add the drained butter beans, a sprinkle of salt, and smoked paprika to the pan. Stir for about 1–2 minutes.
  4. Pour in the apple cider vinegar and allow it to simmer for 1 minute.
  5. Introduce vegetable stock and fresh basil leaves, raise the heat to medium-high, and bring to a gentle simmer for about 10 minutes.
  6. Reduce heat to low, stir in the single cream and grated Parmesan cheese until creamy.
  7. Add the fresh spinach, stirring gently until it wilts down, about 2 minutes.
