- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 30 seconds until fragrant.
- Add 1 teaspoon of red pepper flakes, 1 teaspoon each of dried oregano and thyme, and ¼ cup of chopped sun-dried tomatoes. Cook for 1 minute.
- Pour in 1 can of crushed tomatoes, 1 cup of vegetable broth, and ¾ cup of coconut milk. Stir and bring to a simmer.
- Gently fold in 2 cans of butter beans, seasoning with salt and pepper. Simmer for 10-15 minutes.
- Stir in 4 cups of fresh spinach and cook until wilted, about 2-3 minutes. Toss in fresh basil.
- Serve warm with gluten-free crusty bread, rice, or roasted vegetables.
