Cooking Instructions
- Begin by bringing a large pot of salted water to a boil, then add your macaroni. Cook according to package instructions, usually around 8-10 minutes, until al dente, then drain and set aside.
- While the pasta is cooking, soak 1 cup of cashews in water for at least 2 hours. If short on time, a quick soak in hot water for 30 minutes will also work.
- Peel and chop 1-2 medium sweet potatoes and steam for about 15-20 minutes, until fork-tender. Mash them after cooling slightly.
- In a high-speed blender, combine the soaked cashews, steamed sweet potatoes, 1/4 cup of nutritional yeast, 1 tablespoon fresh lemon juice, 1 clove garlic, and 1 cup of almond milk. Blend until smooth.
- In a large saucepan, combine the cooked macaroni and the creamy sauce over low heat. Stir continuously for about 3-5 minutes until everything is heated through.
- If using any vegetables, toss them into the macaroni and sauce mixture at this stage. Stir well and cook for another 2-3 minutes.
- Spoon your creamy Sweet Potato Vegan Mac and Cheese into bowls and garnish with extra nutritional yeast or spices. Serve warm.
