  • 1 medium bell pepper Any color
  • 1/4 cup cilantro Chopped; optional
  • 1 medium avocado Cubed; add just before serving
  • 2 tablespoons lime juice Adjust to taste
  • 1/4 teaspoon cayenne pepper Adjust for heat preference
  • 1/4 teaspoon chili powder Adjust for heat preference
Dressing
  • 1 teaspoon salt To taste
  • 1 teaspoon pepper To taste

Step-by-Step Instructions
  1. In a large mixing bowl, combine cream cheese with the zest and juice of limes. Blend until smooth and creamy. Season with salt and pepper.
  2. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions, about 8-10 minutes. Drain and toss with olive oil.
  3. Heat a grill pan over medium-high heat. Grill corn, turning occasionally, until caramelized, about 8-10 minutes. Remove from heat and cut kernels off the cob.
  4. In the bowl with the dressing, add pasta, corn, red onion, bell pepper, and cilantro. Gently fold together.
  5. Cube avocado and fold into the salad. Adjust seasoning if needed and let rest for 15-20 minutes before serving.
