Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) for caramelization.
  2. Cut tomatoes into wedges and slice garlic tops. Arrange on a baking sheet, drizzle with olive oil and sprinkle with sea salt.
  3. Roast in the oven for 35-40 minutes until tomatoes are caramelized and garlic is soft.
  4. In a large Dutch oven, heat 1 tbsp of olive oil and sauté diced onions for 1-2 minutes until translucent.
  5. Add roasted garlic and tomatoes to a blender with onions, tomato paste, and vegetable broth. Blend until smooth.
  6. Pour the mixture back into the Dutch oven, bring to a simmer, and stir in heavy cream, smoked paprika, and seasoning. Simmer for 5-6 minutes.
  7. Serve in bowls, garnish with reserved tomatoes, and enjoy with a grilled cheese sandwich.
