- Prepare Ingredients: Thinly slice Yukon Gold potatoes and soak them in cold water. Rehydrate dried porcini mushrooms by soaking in warm water for about 20 minutes, then drain and chop.
- Sauté Pancetta: In a large skillet over medium heat, cook diced pancetta until crispy and golden, about 5-7 minutes. Remove from skillet and set aside.
- Cook Onion & Garlic: Add chopped onions to the skillet with pancetta drippings, sauté until soft. Add minced garlic and cook for an additional minute.
