Step-by-Step Instructions
  1. Prepare Ingredients: Thinly slice Yukon Gold potatoes and soak them in cold water. Rehydrate dried porcini mushrooms by soaking in warm water for about 20 minutes, then drain and chop.
  2. Sauté Pancetta: In a large skillet over medium heat, cook diced pancetta until crispy and golden, about 5-7 minutes. Remove from skillet and set aside.
  3. Cook Onion & Garlic: Add chopped onions to the skillet with pancetta drippings, sauté until soft. Add minced garlic and cook for an additional minute.
  4. Layering: Preheat oven to 375°F (190°C) and grease a baking dish. Layer half of the sliced potatoes, half the onion, garlic, pancetta, and chopped mushrooms. Season with salt and pepper, then repeat.
  5. Mix Cream & Cheese: In a mixing bowl, whisk together heavy cream, grated Gruyere cheese, salt, and pepper. Pour over the layered ingredients.
  6. Bake: Place gratin in the preheated oven and bake for 45-60 minutes until golden and fork-tender. The edges should be bubbling.
  7. Finish: If needed, broil for 2-3 minutes for extra browning. Allow to cool slightly before serving.
