Method
 

Cooking Instructions
  1. Finely dice the shallots and garlic, and clean and slice the cremini mushrooms.
  2. Melt 4 tablespoons of butter over medium heat until golden brown, about 3–5 minutes.
  3. Add the sliced cremini mushrooms to the skillet and sauté until their liquid has evaporated, about 8 minutes.
  4. Stir in the minced shallots, garlic, and thyme; cook for about 2 minutes until fragrant.
  5. Pour in the beef broth and bring to a gentle simmer; cook for about 12 minutes until reduced by half.
  6. Mix in the heavy cream, stir, and allow to simmer for another 12 minutes.
  7. Cook the pappardelle in a pot of salted boiling water until al dente, reserving 1 cup of pasta water.
  8. Combine the drained pasta with the sauce, adding reserved pasta water to achieve desired texture.
  9. Plate the pasta and top with torn pieces of burrata; drizzle with truffle oil if desired.
