  • 1 cup Stock (chicken or vegetable) Base of the sauce; adjust seasoning accordingly.
  • 125 ml / 1/2 cup Double Cream/Heavy Cream Adds luxurious creaminess; can swap with half-and-half.
For Finishing Touches
  • Salt & Pepper Essential for seasoning.
  • 1-2 sprigs Parsley, optional Fresh garnish.

Step-by-Step Instructions
  1. In a cast-iron skillet, heat a tablespoon of olive oil over low heat. Add the chopped onion and sauté for 5–7 minutes until translucent.
  2. Stir in the minced garlic and sauté for an additional 30 seconds.
  3. Add the sliced mushrooms, a pinch of pepper, and the chopped rosemary. Cook for about 5–7 minutes.
  4. Season with salt. Sprinkle flour over the mixture and stir to coat evenly. Cook for another 1–2 minutes.
  5. Pour in the sweet Marsala wine and deglaze the pan. Allow it to simmer for about 5 minutes.
  6. Stir in 1 cup of stock and simmer for an additional 5 minutes.
  7. Slowly add the heavy cream, stirring well to combine. Heat through for 2–3 minutes.
  8. Garnish with fresh parsley before serving.
