Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 cup of diced shallots and sauté for about 3-5 minutes, until they become translucent and fragrant.
  2. Stir in 2 minced garlic cloves and cook for an additional 30 seconds, stirring constantly to prevent browning.
  3. Add 2 cans of rinsed butter beans, 1 cup of vegetable stock, and 3 tablespoons of white miso paste to the skillet. Stir to combine, then bring to a gentle simmer. Cook for about 10 minutes.
  4. Stir in ½ cup of whole cream or coconut cream and simmer for another 5 minutes, allowing the sauce to thicken.
  5. Mix in 2 cups of fresh baby spinach, stirring until it wilts down, about 1-2 minutes.
  6. Remove from heat and stir in the juice of half a lemon. Taste and adjust seasoning with sea salt and ground black pepper as desired.
  7. Optionally, garnish with fresh dill before serving. Enjoy hot!
