  1. Start by placing the raw cashews in a medium-sized pan, covering them with boiling water. Boil for about 15 minutes, then drain.
  2. In a high-speed blender, combine drained cashews, Dijon mustard, lemon juice, sea salt, light olive oil, white wine vinegar, and nutritional yeast. Blend until smooth.
  3. Transfer the mixture to a nonstick pan over medium heat and stir continuously for about 5-10 minutes until thickened.
  4. Pour the mixture into a shallow dish, let it cool for 10 minutes, then refrigerate for at least 3 hours until firm.
  5. Slice the chilled mixture into six pieces, heat a lightly oiled pan, and fry each side for about 5 minutes until golden brown.
