Ingredients
  

For the Pasta
  • 8 oz Barilla Protein+ pasta any short pasta shape like rotini or chickpea pasta also works
For the Corn
  • 4.5 cups corn charred in a pan to bring out the smoky flavor
For the Creaminess
  • ½ cup cotija cheese provides richness and tang, feta can be a substitute
  • ¾ cup Greek yogurt ideal for creaminess and tang, can use sour cream
  • 2 tbsp mayonnaise to balance the tang
For the Veggies
  • ½ red onion finely diced for added crunch and sweetness
  • ½ cup cilantro adds freshness, parsley can also work
  • 1 jalapeño seeded and minced to control heat
For Flavor
  • 1 lime juice and zest for brightness
  • to taste spices (Chili Powder, Smoked Paprika, Garlic Powder, Ground Cumin, Salt, Black Pepper) to deepen the flavor

Method
 

Step-by-Step Instructions
  1. Cook pasta according to package directions in a large pot of salted boiling water until al dente (about 8-10 minutes). Drain, drizzle with olive oil, and cool.
  2. Char the corn in a skillet over medium-high heat until golden, about 3-4 minutes, stirring occasionally. Remove from heat and let cool.
  3. In a bowl, whisk together Greek yogurt, mayonnaise, lime juice and zest, and spices until smooth. Adjust seasoning to taste.
  4. In a large bowl, combine cooled pasta, charred corn, red onion, jalapeño, cilantro, and cotija cheese. Fold together gently.
  5. Dress the pasta mixture with the prepared dressing and toss to coat evenly. Let sit for 10-15 minutes before serving.
