  • 4 cups Broccoli fresh, bite-sized pieces
  • 1 cup Long-Grain White Rice uncooked
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 cups Chicken Broth or vegetable broth for vegetarian
  • 1 can Cream of Mushroom Soup can be gluten-free
  • 1 cup Milk or non-dairy alternative
  • 2 cups Cheddar Cheese freshly shredded
  • 0.5 cups Parmesan Cheese optional
  • to taste Seasonings (pepper, paprika, salt)
For the Topping (Optional)
  • 0.5 cups Toasted Panko Breadcrumbs mixed with butter

Method
 

Step-by-Step Instructions
  1. Wash and chop broccoli into bite-sized pieces. Dice onion and mince garlic.
  2. Grease the crockpot with nonstick cooking spray or butter.
  3. Layer dry ingredients: uncooked rice, broccoli, onion, garlic, and seasonings.
  4. In a bowl, whisk together chicken broth, cream of mushroom soup, and milk until smooth.
  5. Pour the liquid mixture over the dry ingredients and gently stir to combine.
  6. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours.
  7. 15 minutes before done, stir in cheddar and optional Parmesan cheese.
  8. Let rest for 5-10 minutes with the lid off before serving.
  9. Garnish with parsley or chives before serving.
