- In a large skillet, heat olive oil over medium heat. Add chicken breasts seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper. Sauté for 5-6 minutes until golden brown and cooked through. Remove chicken from skillet.
- In the same skillet, sauté minced garlic for about 30 seconds until fragrant. Add chicken broth and simmer for 2 minutes. Then stir in heavy cream, cream cheese, cheddar cheese, crumbled bacon, and ranch seasoning until creamy.
- Add potato gnocchi to the creamy sauce and simmer for about 5 minutes, stirring gently until tender. Return cooked chicken to the skillet and mix together.
- If using, stir in baby spinach until wilted for 1-2 minutes. Top with grated Parmesan cheese before serving warm.
