Step-by-Step Instructions for Cod Au Gratin
  1. Preheat your oven to 350°F (180°C).
  2. Cut the cod loins into 1-inch pieces and arrange them in a single layer in your baking dish.
  3. Melt 3 tablespoons of butter in a medium saucepan over medium heat. Add chopped onion and minced garlic; cook until the onion is translucent, about 4-5 minutes.
  4. Stir in 2 tablespoons of corn starch and cook for another minute. Gradually whisk in 1/2 cup of dry white wine and 2 cups of milk, stirring until thickened, about 3-4 minutes. Remove from heat and add half of the Parmesan and cheddar cheese until melted and smooth. Season with dried summer savory, salt, and pepper to taste.
  5. Pour the cheese sauce over the cod, ensuring every piece is coated. Top with remaining cheeses and 1 cup of crumbled potato chips.
  6. Bake uncovered for 35-50 minutes until the sauce bubbles and the top is golden brown. Check the cod is opaque and flakes easily.
