- Trim the dark green tops and root ends of the leeks, then slice into 1-inch pieces. Soak in cold water to remove grit; transfer to colander and pat dry.
- Preheat your oven to 325°F (163°C) and butter the bottom and sides of a baking dish. Season with salt and pepper.
