Step-by-Step Instructions for Creamy Black Bean Curry
- Melt 2 tablespoons of plant-based spread in a large skillet over medium-high heat. Add 1 teaspoon of cumin seeds and sauté for about 2 minutes.
- Add 1 chopped onion to the skillet and sauté for approximately 5 minutes until soft and lightly browned.
- Add 3 crushed garlic cloves and cook for an additional minute, stirring.
- Add 2 finely chopped fresh tomatoes and sauté for 5 to 7 minutes.
- Sprinkle in 1 teaspoon of cayenne pepper, 1 teaspoon of ground coriander, 1 teaspoon of garam masala, and ½ teaspoon of turmeric, and cook for about 1 minute.
- Mix in 2 cups of drained cooked black beans and 1 cup of vegetable stock. Bring to a simmer and allow to cook for about 12 minutes.
- Stir in ½ cup of coconut cream, along with fresh cilantro and 1 tablespoon of kasuri methi, if using.
