Step-by-Step Instructions
  1. Soak the cashews overnight or boil them for 1-2 hours until soft.
  2. Blend silken tofu, plant-based milk, soaked cashews, sugar, lemon zest, lemon juice, vanilla extract, and salt until smooth.
  3. Add cornstarch or agar-agar and blend again until well incorporated.
  4. Heat the mixture in a saucepan over medium heat while whisking for 2-3 minutes until bubbles form and it thickens.
  5. Whisk in an additional tablespoon of lemon juice off heat for extra brightness.
  6. Pour the filling into the pre-prepared crust and smooth the top.
  7. Chill in the refrigerator for at least 3 hours until fully set.
  8. Slice into wedges and serve chilled, optionally with fruit compote or chocolate sauce.
