Step-by-Step Instructions
  1. In a blender or food processor, place one ripe avocado, a generous handful of fresh cilantro, 1/4 cup of olive oil, and the juice from one lime. Add one large garlic clove and sea salt to taste.
  2. Secure the lid on your blender or food processor and blend on high for about 30-60 seconds, or until the mixture is smooth and creamy. Stop to scrape down the sides as needed.
  3. Check the consistency of your dressing; gradually add 2-4 tablespoons of water while blending if it's thicker than you’d like.
  4. Once your dressing is smooth, taste and adjust seasoning by adding more sea salt or lime juice if desired.
  5. Transfer your dressing to an airtight container and store in the refrigerator for up to 5-7 days.
