  • 2 cloves Garlic minced
  • 1 teaspoon Cumin Seeds or ground cumin
  • 1 tablespoon Fresh Ginger finely grated
  • 1 pinch Chili Flakes to taste
  • 1 tablespoon Sugar brown sugar recommended
For the Vegetables
  • 2 medium Sweet Potatoes diced
  • 1 medium Parsnip chopped
  • 1 medium Red Pepper diced
  • 1 14 oz can Chopped Tomatoes
  • 4 cups Vegetable Stock homemade preferred
For the Creaminess
  • ½ cup Peanut Butter creamy
  • to taste Salt
  • to taste Pepper
For Garnish
  • to taste Chopped Roasted Peanuts

Method
 

Step-by-Step Instructions
  1. In a large pot, heat olive oil over medium-low heat. Add cumin seeds, chili flakes, and ginger. Sauté for about 1 minute.
  2. Stir in onion and garlic, followed by sugar. Cook for 3-4 minutes until onions are translucent.
  3. Add sweet potatoes, parsnip, and red pepper. Cook for another 2-3 minutes, stirring frequently.
  4. Pour in vegetable stock and canned tomatoes, stirring well. Bring to a boil, then reduce to low and simmer uncovered for about 15 minutes.
  5. Use an immersion blender to puree the soup until smooth and creamy.
  6. Return the blended soup to heat and stir in peanut butter. Simmer for a few minutes, adjusting seasoning as necessary.
  7. Ladle the soup into bowls and garnish with chili flakes and roasted peanuts.
