Preparation Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Wash the sweet potatoes and pierce them with a fork. Bake for 45-60 minutes until tender.
- Cut the baked sweet potatoes in half and scoop the flesh into a bowl. Leave a border in the skins.
- Mix the sweet potato flesh with cranberries, apples, brown sugar, cinnamon, butter, and salt.
- Spoon the filling back into the sweet potato skins, packing gently. Arrange on the baking sheet.
- Lower the oven temperature to 350°F (175°C) and bake for 20-25 minutes until heated through.
- Allow to cool slightly before serving warm.
