Step‑by‑Step Instructions for Crab and Shrimp Seafood Bisque
  1. Begin by peeling and deveining the shrimp, ensuring they are cleaned thoroughly. Inspect the crab meat for shell fragments and set aside.
  2. In a large pot, melt butter and olive oil, then sauté diced onion, celery, and carrots for 5-7 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute. Add tomato paste and cook for 1-2 minutes.
  4. Sprinkle flour over the vegetables and cook for about 1 minute to eliminate the raw taste.
  5. Gradually add broth, stirring continuously until it comes to a gentle boil, then reduce to a simmer.
  6. Add Old Bay seasoning, paprika, and bay leaf, and simmer for about 10 minutes, adjusting salt and pepper to taste.
  7. Blend part of the bisque for desired texture and return to pot.
  8. Stir in heavy cream, then gently fold in shrimp and crab meat. Simmer for another 5-7 minutes until shrimp are opaque.
  9. Adjust seasoning, remove bay leaf, and garnish with parsley or chives. Serve with lemon wedges.
