Step-by-Step Instructions for Winter Farro & Kale Salad
  1. Cook the farro: Bring a large pot of salted water to a boil. Add farro and cook for 15-17 minutes, until tender. Drain and let cool.
  2. Roast the vegetables: Preheat oven to 400°F (200°C). Toss broccoli and onion with olive oil and herbs, then roast for 20 minutes.
  3. Prepare the kale and chickpeas: Rinse and chop the kale. Drain and rinse chickpeas. Set aside.
  4. Make the dressing: In a jar, combine olive oil, lemon juice, garlic, mustard, red pepper flakes, and oregano. Shake or whisk until mixed.
  5. Assemble the salad: Massage kale with dressing, then add cooled farro, roasted vegetables, and chickpeas. Toss gently.
