  1. Pat the venison roast dry with paper towels and season with salt and pepper. Coat with flour to help thicken the gravy.
  2. Heat a skillet over medium-high and add olive oil. Sear the roast for 5-7 minutes on all sides until golden brown.
  3. Sauté diced onion and smashed garlic in the same skillet for about 2 minutes, then add thyme and rosemary. Pour in red wine and simmer until reduced by half.
