Ingredients
  

For the Base
  • 1.5 lbs Potatoes peeled and diced into 1-inch cubes
  • 1 cup Dry Lentils brown or green lentils recommended
  • 2 medium Carrots peeled and diced
  • 2 stalks Celery diced
  • 1 medium Yellow Onion diced
For Flavor
  • 4 cups Vegetable Broth high-quality broth recommended
  • 1 can Diced Tomatoes undrained
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Dried Thyme or fresh thyme
  • 1 teaspoon Smoked Paprika optional
  • 1 leaf Bay Leaf remove before serving
  • 3 cloves Garlic minced
For Seasoning
  • to taste Salt
  • to taste Black Pepper
For Extra Nutrition (Optional)
  • 2 cups Fresh Spinach stir in during the last 15-20 minutes
  • 1/4 cup Fresh Parsley chopped, for garnish

Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of dry lentils under cold water to remove dirt or debris. Set aside to drain.
  2. Peel and dice 1.5 lbs of potatoes into 1-inch cubes, and do the same with 2 carrots and 2 celery stalks. Finely dice 1 yellow onion and mince 3 cloves of garlic.
  3. Combine the rinsed lentils, chopped potatoes, carrots, celery, onion, and garlic in the slow cooker. Stir gently.
  4. Pour in 4 cups of vegetable broth and add the undrained diced tomatoes. Stir to combine all ingredients.
  5. Stir in 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, 1 teaspoon of smoked paprika, and season with salt and black pepper to taste.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. If using, stir in 2 cups of fresh spinach during the last 15-20 minutes of cooking.
  8. Once done, remove the bay leaf, taste, and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
