Step-by-Step Instructions
  1. Blend the Apples: Slice six medium apples and place them in a blender with two tablespoons of lemon juice and one cup of water. Blend until smooth, about 30-45 seconds.
  2. Strain the Juice: Pour the mixture through a fine mesh sieve over a bowl, pressing down gently with a spatula to extract juice while leaving pulp behind.
  3. Simmer the Syrup: In a medium saucepan, pour in the apple juice and add a quarter cup of maple syrup, three cinnamon sticks, and all spices. Simmer over medium heat for 20-30 minutes.
  4. Finish the Syrup: Remove from heat, discard cinnamon sticks, and stir in one teaspoon of vanilla extract. Let the syrup cool completely.
  5. Assemble the Drink: Fill a glass with ice cubes, add two tablespoons of cooled syrup, and pour in three-quarters of a cup of chilled sparkling water. Stir gently.
  6. Optional Garnish: Top with two tablespoons of whipped heavy cream or coconut cream, and garnish with a cinnamon stick or slice of apple.
