- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
- Whisk the large eggs in a large mixing bowl until they are well-blended and frothy, about 1-2 minutes.
- Add the cottage cheese to the eggs and gently fold until you achieve a smooth mixture.
- Stir in the shredded cheddar cheese until evenly distributed.
- Add the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder; mix thoroughly.
- Dissolve the baking powder in a teaspoon of water and fold it into the egg mixture.
- Pour in the olive oil and stir until completely smooth.
- Fill the muffin cups about ¾ full with the mixture and bake for 18-20 minutes until set and lightly golden.
- Remove from oven, cool for about 5 minutes, then gently run a knife around the edges and lift them out.
