Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil.
  2. Whisk the large eggs in a large mixing bowl until they are well-blended and frothy, about 1-2 minutes.
  3. Add the cottage cheese to the eggs and gently fold until you achieve a smooth mixture.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. Add the chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder; mix thoroughly.
  6. Dissolve the baking powder in a teaspoon of water and fold it into the egg mixture.
  7. Pour in the olive oil and stir until completely smooth.
  8. Fill the muffin cups about ¾ full with the mixture and bake for 18-20 minutes until set and lightly golden.
  9. Remove from oven, cool for about 5 minutes, then gently run a knife around the edges and lift them out.
  10. Serve warm or store in an airtight container in the fridge for up to 4 days.
