Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C) and prepare a baking sheet lined with parchment paper.
  2. Pierce each sweet potato several times with a fork, roast for 45-55 minutes until soft.
  3. Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes until translucent.
  4. Add frozen mixed vegetables to the skillet, cook for about 5 minutes until heated through.
  5. Incorporate cooked chicken, chicken broth, garlic powder, thyme, salt, and pepper into the skillet. Simmer for 5-7 minutes.
  6. Remove from heat, blend in cottage cheese until creamy.
  7. Slice roasted sweet potatoes lengthwise, fluff the insides, and fill with chicken mixture.
  8. Serve warm, garnished with additional thyme or favorite herbs.
