Preparation Steps
- Preheat your oven to 400°F (204°C) and prepare a baking sheet lined with parchment paper.
- Pierce each sweet potato several times with a fork, roast for 45-55 minutes until soft.
- Heat olive oil in a skillet over medium heat, sauté onion for 3-4 minutes until translucent.
- Add frozen mixed vegetables to the skillet, cook for about 5 minutes until heated through.
- Incorporate cooked chicken, chicken broth, garlic powder, thyme, salt, and pepper into the skillet. Simmer for 5-7 minutes.
- Remove from heat, blend in cottage cheese until creamy.
- Slice roasted sweet potatoes lengthwise, fluff the insides, and fill with chicken mixture.
- Serve warm, garnished with additional thyme or favorite herbs.
