  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Cayenne Pepper Optional, use according to heat tolerance.
  • 4 cups Chicken Broth Can substitute with vegetable broth.
For Added Texture
  • 1 can Great Northern Beans Drained and rinsed.
  • 1 can Diced Green Chiles
  • 1 cup Frozen Corn
For Creaminess
  • 1/2 cup Heavy Cream or Sour Cream Can substitute with Greek yogurt.
For Garnishing

  • 1/4 cup Fresh Cilantro Chopped.
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Sour Cream or Greek Yogurt For topping.

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add chopped onion and diced bell peppers, sautéing for about 5-7 minutes until softened.
  2. Stir in minced garlic, cooking for an additional minute until golden.
  3. Add bite-sized pieces of chicken, sprinkle with Cajun seasoning, cumin, smoked paprika, and optional cayenne pepper. Cook for 5-7 minutes until chicken is browned.
  4. Pour in 4 cups of chicken broth, scraping up any browned bits from the pot. Add Great Northern beans and diced green chiles, stirring well.
  5. Bring to a gentle simmer, then reduce to low heat. Cover and simmer for 30 minutes to 1 hour.
  6. Stir in 1 cup of frozen corn and cook for an additional 5 minutes.
  7. Optional: Stir in heavy cream or sour cream to taste and warm gently without boiling.
  8. Adjust seasoning with salt and pepper, then serve garnished with cilantro, shredded cheese, and sour cream or Greek yogurt.
