Ingredients
  

For the Salad
  • 2 cups Elbow macaroni or small pasta shapes
  • 1 cup Mayonnaise or Greek yogurt for a lighter option
  • 1 tablespoon Dijon mustard yellow mustard can be used
  • 1 tablespoon White vinegar or apple cider vinegar
  • 1 medium Bell pepper diced; can use diced celery
  • 1 teaspoon Onion powder or freshly chopped onion
  • 1 cup Celery diced; cucumbers are an alternative
  • 1 teaspoon Sugar omit or substitute for less sweetness
  • to taste Salt
  • to taste Pepper
Optional Add-ins
  • 1 cup Diced ham for added protein
  • 2 hard-boiled Eggs chopped for richness

Method
 

Prep Steps
  1. Bring a large pot of salted water to a rolling boil. Add macaroni and cook until al dente, about 7–8 minutes. Drain and rinse under cool water.
  2. In a medium mixing bowl, combine mayonnaise, Dijon mustard, white vinegar, sugar, salt, pepper, and onion powder. Whisk until smooth.
  3. Add diced celery and bell pepper to the dressing, folding gently. Mix until well coated.
  4. In a large mixing bowl, combine cooled macaroni with half of the dressing and gently fold together.
  5. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  6. Just before serving, toss the salad with the remaining dressing. Adjust seasoning to taste.
