- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan and optionally line the bottom with parchment paper.
- Grate about two cups of fresh zucchini and pat dry to remove excess moisture.
- In a small bowl, combine the granulated sugar, light brown sugar, and ground cinnamon. Mix in the melted butter until crumbly.
- In a large bowl, whisk together the all-purpose flour, remaining sugars, baking powder, baking soda, sea salt, and cinnamon.
- In another bowl, whisk the eggs, oil, milk, and vanilla. Mix in the zucchini.
- Gently fold the wet ingredients into the dry mixture until just combined.
- Spread half of the batter in the prepared baking pan. Sprinkle with half of the cinnamon sugar mixture, then dollop the remaining batter on top.
- Sprinkle the reserved cinnamon sugar mixture on top and swirl with a knife.
- Bake for 30 to 40 minutes until golden and a toothpick comes out with a few crumbs.
- Allow to cool for 20 to 30 minutes before slicing.
