  • 1 can Chickpeas drained and rinsed
  • 2 medium Beets roasted or canned
  • 1 cup Feta Cheese crumbled
For the Dressing
  • 3 tablespoons Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 4 tablespoons Olive Oil extra virgin
  • to taste Salt
  • to taste Pepper
Optional Add-ins
  • 1/4 cup Toasted Nuts walnuts or sunflower seeds
  • 1/4 cup Fresh Herbs dill or mint
  • 1 medium Avocado sliced

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wrap beets in foil and roast for about 45-60 minutes until tender.
  2. Once cooked, peel and dice the beets into bite-sized pieces.
  3. In a large mixing bowl, combine chickpeas, diced beets, and crumbled feta cheese.
  4. In a separate bowl, whisk together lemon juice, minced garlic, olive oil, salt, and pepper.
  5. Pour the vinaigrette over the salad mixture and gently toss until well-combined.
  6. Let the salad rest for at least 15 minutes before serving for flavors to meld.
