  • 1 cup Spinach Fresh or frozen (thaw and drain)
  • 1 cup Artichoke Hearts Canned or frozen
  • 8 oz Cream Cheese Can use low-fat
  • 1/2 cup Sour Cream Greek yogurt can be a substitute
  • 1 cup Shredded Cheese e.g., Mozzarella or Parmesan
  • 1 tsp Garlic Powder
  • to taste Salt & Pepper
For the Cups
  • 12 pieces Pastry Shells or Muffin Liners Silicone muffin liners recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare muffin tin by greasing or placing silicone liners.
  2. In a large bowl, mix spinach, artichoke hearts, cream cheese, sour cream, shredded cheese, garlic powder, salt, and pepper until creamy.
  3. Spoon the filling into muffin cups, filling about three-quarters full and smoothing the tops.
  4. Bake in the preheated oven for 20-25 minutes until cheese is bubbly and tops are golden brown.
  5. Remove from oven and cool for a few minutes before serving warm.
