  2. Prepare the Sweet & Spicy Sauce: Combine honey and hot sauce in a bowl. Whisk until smooth. Return sliced chicken to the skillet, pour sauce over, and stir to coat. Keep warm for 2-3 minutes.
  3. Mix the Jalapeño Cream Sauce: Blend sour cream, chopped jalapeños, and lime juice. Season with a pinch of salt and refrigerate.
  4. Assemble the Quesadillas: On a tortilla, layer shredded cheddar cheese, honey-coated chicken, another sprinkle of cheese, and fold. Press down gently.
