  1. In a medium saucepan, combine water and unsalted butter. Bring to a boil, then add all-purpose flour and stir until smooth. Cook for 1-2 minutes until dough pulls away from sides.
  2. Allow the dough to cool slightly, then mix in the eggs one at a time until glossy. Fold in Gruyère and Parmesan cheese.
  3. Preheat your oven to 425°F (220°C) and line baking sheets with parchment paper.
  4. Drop tablespoon-sized mounds of dough onto the baking sheets, spacing them 2 inches apart. Sprinkle extra cheese on top.
