Ingredients

  • 1/2 cup shredded cheddar or Monterey Jack cheese Feel free to substitute with your favorite cheese.
  • 1/2 lb breakfast sausage or bacon, cooked and crumbled Swap with mushrooms or seasoned black beans for vegetarian option.
For the Tortillas
  • 8 small corn or flour tortillas Opt for corn for a gluten-free choice.
  • 1 tsp vegetable oil Can be replaced with cooking spray or omitted.
For Toppings
  • 1/2 cup fresh salsa or pico de gallo Adds vibrant flavor.
  • 1 medium avocado sliced or mashed.
  • 2 tbsp fresh cilantro chopped.
  • 1 tbsp lime juice Adds zesty acidity.

Method
 

Cooking Instructions
  1. In a medium skillet, over medium heat, cook the crumbled breakfast sausage or bacon until it’s fully browned, approximately 5-7 minutes. Remove the meat and place it on a paper towel to absorb excess grease, reserving about a tablespoon of the fat in the skillet.
  2. In a mixing bowl, whisk together the 4 large eggs with salt and pepper. Melt 1 tablespoon of unsalted butter in the reserved fat. Once bubbling, pour the eggs into the skillet, stirring gently. Cook until just set but still creamy, about 2-3 minutes, then remove from heat.
  3. Char the tortillas in the skillet or on a gas burner. Lightly brush each tortilla with 1 teaspoon of vegetable oil and heat each for about 30 seconds on each side until warm and slightly crispy.
  4. Lay the tortillas flat and start with a layer of shredded cheese, followed by the creamy scrambled eggs, and then the cooked sausage or bacon. Top with avocado, fresh salsa, chopped cilantro, and lime juice.
