Ingredients
  

For the Pasta
  • 12 oz Penne or Rotini
For the Protein
  • 2 pieces Chicken Breasts Diced into bite-sized pieces
  • 1 lb Shrimp Peeled and deveined
  • 1 cup Tofu or Chickpeas Great meatless option
For the Vegetables
  • 1 piece Red Bell Pepper Sliced
  • 1 piece Yellow Bell Pepper Sliced
  • 1 piece Green Bell Pepper Sliced
  • 2-3 cloves Garlic Minced
For the Sauce
  • 2-3 tbsp Jerk Seasoning To taste
  • 1/4 cup Chicken or Vegetable Stock
  • 1/2 cup Heavy Cream or Coconut Milk Coconut milk makes it dairy-free
  • 1/2 cup Parmesan Cheese Grated, substitute with vegan cheese for dairy-free
For Cooking
  • Olive Oil Use as needed
  • Salt & Pepper Season to taste
Optional Boosters
  • 1 tbsp Lime Juice For brightness
  • Cayenne or Scotch Bonnet For additional heat
  • Thyme or Allspice For aromatic complexity

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil, then add 12 oz of penne or rotini and cook until al dente, about 8-10 minutes. Drain without rinsing.
  2. In a large skillet, heat olive oil and add your choice of protein. Cook until golden brown, about 5-7 minutes, then remove from skillet.
  3. In the same skillet, sauté sliced bell peppers for 4-5 minutes until softened, add minced garlic and cook for an additional 30 seconds.
  4. Stir in jerk seasoning, then add stock and cream or coconut milk. Simmer for 3-5 minutes until sauce thickens.
  5. Add the cooked protein and pasta back into the skillet and toss everything together over low heat for 2-3 minutes.
  6. Mix in grated Parmesan cheese until melted and creamy. Taste and adjust seasoning, serve hot with lime juice.

Notes
