- In a large mixing bowl, combine rolled oats and blueberries. Stir gently until evenly incorporated.
- In another bowl, whisk together nut butter, honey or maple syrup, and lemon juice until smooth.
- Pour the wet mixture over the dry ingredients and fold together until fully combined.
- Line an 8x8 inch baking dish with parchment paper. Spread the mixture evenly and press down firmly.
- Place the baking dish in the refrigerator to chill for at least 2 hours.
- Remove from dish and slice into bars. Store leftovers in an airtight container in the fridge.
